Chris Fischer, Matt Jennings, and Nico Monday visited Google to discuss "The Beetlebung Farm Cookbook" and farm-to-table cooking. All three are chefs. Chris Fischer runs Beetlebung Farm in Chilmark, MA. Matt Jennings is chef and co-owner of Townsman restaurant in Boston. Nico Monday is chef and co-owner of the Market and Short & Main restaurants in Gloucester, MA.

Chris Fischer grew up on Martha's Vineyard, a member of the twelfth generation of his family to inhabit the island. After cooking in some of the leading kitchens in the world--Babbo in New York City; the American Academy in Rome; and The River Cafe in London--he returned to Beetlebung, where he served as both the chef and farmer. He is also became a chef at the renowned Beach Plum Inn on Martha's Vineyard.

Matt Jennings

Lots of chefs make their own ricotta or chèvre, but few have gone as far or as deep as Matt Jennings. Not only does he run an excellent cheese shop (Farmstead) and a bistro (La Laiterie) in Rhode Island, he also collaborates with small farms on experimental cheeses. He worked with Dancing Cow Farm on its famed washed-rind Sarabande and innovates with other cheeses on his own.

Nico Monday

Nico Monday grew up in Alice Waters' kitchen at Chez Panisse surrounded by inspiring chefs and farmers changing the way the community thought about food. He fell in love with Amelia and they cooked together for 6 years before heading east. In 2014, they joined forces with friends to open Short & Main and continued to work tirelessly to cook with exceptional ingredients and partner with small farmers.
